I think it's the fact that since you have perfect details in each segment of the photo, you lose out on the true contrasts that you woudl have otherwise, leaving you feeling entirely neutral about them. The total dark of a shadow or perfect light of a highlight may not be as vibrant or dynamic as the HDR, but they have a special contrast to make them interesting in spite of this.
